Ingredients:
5.0 lbs. Munton's Light Malt Extract
1/3 lbs. Munton's Extra Light Dried Malt Extract
8 oz. Crystal Malt (80)
1 oz. Northern Brewer hop plugs
(bittering, 8% AA, 8 HBU)
1/2 oz. Kent Goldings hop pellets (flavor/aroma)
1 pkg. Wyeast 1028 London Ale Yeast
O.G.: 1.037
F.G.: 1.011
Notes:
  1. Treated water with 2 tsp. gypsum to raise sulfate ions to help accentuate hop bitterness and general dryness.
  2. 9/7 - Tasted a few bottles, and this turned out to be a very lightly carbonated beer.  I was trying to be true to the draught style, but I think it might have been a bit underdone.  Never-the-less, I roused the yeast in all of the bottles to perhaps encourage a little more carbonation.  The taste is good-- clean and smooth, and the Kent Goldings come through subtly but nicely.
